Making homemade pasta from scratch is a delightful and rewarding culinary adventure! Here’s a step-by-step guide to help you create the perfect homemade pasta:

### Ingredients:
– 2 cups all-purpose flour (plus extra for dusting)
– 3 large eggs
– 1 tablespoon olive oil
– A pinch of salt

### Instructions:

1. **Prepare the Dough:**
– On a clean surface or in a large mixing bowl, create a mound with the flour and make a well in the center.
– Crack the eggs into the well and add the olive oil and a pinch of salt.
– Using a fork, gently whisk the eggs and gradually incorporate the flour from the edges of the well until a shaggy dough forms.

2. **Knead the Dough:**
– Dust your hands and the surface with flour. Knead the dough for about 8-10 minutes until it becomes smooth, elastic, and slightly sticky. If the dough is too dry, add a few drops of water. If it’s too sticky, add a little more flour.
– Shape the dough into a ball, cover it with plastic wrap or a clean kitchen towel, and let it rest for at least 30 minutes at room temperature.

3. **Roll Out the Dough:**
– After resting, divide the dough into four equal parts. Take one piece and keep the rest covered to prevent drying out.
– Flatten the dough piece into a rough rectangle and dust it with flour.
– Using a rolling pin or a pasta machine, roll the dough out into a thin sheet. If using a pasta machine, start on the widest setting and gradually work your way to the thinner settings until the dough is about 1-2 mm thick.

4. **Cut the Pasta:**
– Dust the rolled-out dough with flour to prevent sticking. Fold it gently into thirds or roll it loosely.
– Using a sharp knife, cut the dough into your desired pasta shapes—fettuccine, tagliatelle, or pappardelle are great options.
– Unroll the cut pasta and lay it out on a floured surface or a clean kitchen towel to dry slightly while you work on the remaining dough.

5. **Cook the Pasta:**
– Bring a large pot of salted water to a boil.
– Add the fresh pasta and cook for about 2-3 minutes, until it floats to the surface and is tender but still slightly firm to the bite (al dente).
– Drain the pasta and immediately toss it with your favorite sauce.

### Tips:
– Experiment with different flour types, such as semolina or ’00’ flour, for varying textures.
– If you want to add flavor or color to your pasta, incorporate ingredients like spinach, beetroot, or herbs into the dough.
– Fresh pasta cooks much faster than dried pasta, so keep an eye on it!

Homemade pasta is a labor of love, but the results are truly worth it. Enjoy your culinary creation! 🍝
